Turns out the fat you actually want more of has been holding out on us. Scientists long believed brown adipose tissue (BAT) generated heat through a single protein, UCP1 — case closed, mystery solved. Then NIH-funded researchers at Washington University published a study in Nature (September 2025) revealing that BAT runs an entire second heat-production system, tucked inside organelles called peroxisomes and powered by a gene called ACOX2.

Cold exposure specifically wakes this backup pathway up. So when you brave that cold shower or step out into a crisp morning, your brown fat isn’t just doing one job — it’s running parallel operations we’re only beginning to map. The upside: those small, voluntary cold exposures you’ve been half-heartedly attempting may be doing considerably more for your metabolism than anyone knew.
