Turns out the nut you’ve been grabbing by the handful at the bar or snacking on between meetings has quietly earned one of the more exclusive designations in nutrition science.

Most plant foods are incomplete proteins, meaning they contain all nine essential amino acids but not in amounts high enough to actually meet your body’s needs. Beans, seeds, most nuts — they all need backup. The short list of plant foods that qualify as complete proteins on their own includes quinoa, soy, and buckwheat. As of 2020, pistachios joined that list.

Roasted pistachios earned a PDCAAS score of 81 percent of casein, the gold-standard reference protein, officially meeting the FDA definition of a complete protein. Among common nuts, they also carry the highest ratio of essential amino acids to total protein. That combination matters: the protein in pistachios is not just present, it is usable.
