Turns Out Your Chips Are Lying to You

Turns out that bag of avocado oil chips in your pantry might be more canola than cado. A new UC Davis study tested 54 processed foods labeled as containing avocado oil as the sole oil ingredient, and chips came out looking the worst of the bunch by far. Researchers ran chemical fingerprinting, comparing the fatty acid and sterol profiles of each product against verified avocado oil, and built in a generous 10 percent margin to account for natural variation between growing regions and avocado varieties. Even with that cushion, 93 percent of the chip samples still failed. Kettle-style, sea salt, sweet potato, tortilla, it didn’t matter what was in the bag. Most of it tested as cut with cheaper oils like canola, safflower, or soybean, standing in behind an avocado label that never mentioned them.

The label says, “made with avocado oil.” The chemistry, most of the time, says otherwise.

Turns out the crunch might be the only honest thing left in the bag.
