
Turns Out Your Mushrooms Need a Little Sunlight

Turns out, the mushroom sitting in your fridge has more in common with you than you’d guess. Set it gills-up on a windowsill for fifteen to twenty minutes of direct sunlight, and it starts running the same basic photochemistry your own skin does: converting a compound called ergosterol into vitamin D2. Researchers at the University of Copenhagen tracked this in button mushrooms and found a clear, dose-dependent climb in vitamin D2 with sunlight exposure. A short stint in the sun was enough to meaningfully change what ends up on your plate, no lab equipment required.
No greenhouse, no supplement bottle. Just a mushroom, a window, and a little patience.
